Memorial Day Weekend 2012: Corn on the Cob Recipe

Here's a delicious favorite for the holiday.

Corn on the cob

  • 4 ears of chucked corn
  • 1/4 cup melted butter
  • 1/4 cup mayonnaise
  • 1/2 cup grated cotija cheese
  • chili powder to taste
  • Aluminum foil

Preheat an outdoor grill to meduim-high heat. Blend together the butter, mayonnaise, cheese and chili powder. Place corn in aluminum foil, using enough to completely wrap each ear of corn.  Spread butter and mayo mixture even on corn and wrap securely in the foil. Grill corn 7 to 11 minutes, depending of the temperature of the grill. Serve in foil so you get every bit of the delicious goodness!
