Benihana is a national brand of traditional Japanese hibachi steakhouses. Meals are prepared fresh at tables in front of customers using the Japanese cooking method known as "teppanyaki." Teppanyaki is like a performance by the chef, involving an intricate presentation and knife skills. Customers can choose among various ingredients to have cooked. Different cuts of steak, chicken, lobster, shrimp, scallops, tuna and vegetables can be ordered in different combinations. A sushi bar at the restaurant also prepares sushi, sushimi and rolls.
